Over-Extended

I am probably in way over my head trying to go to New York. So much to do. So little time. And working basically alone and in a vacuum.
I give you some edamame. It is a little tired and had a bit of freezer burn (just like me... burned out!) but it still tasted pretty good. I think my goal should be to use up all the old food in the freezer before it is worthless!!!!!!!!!

Last week I only did so-so in my goals to eat better. But the weekend came and I blew it. What else is new. I did make a good meal I want to share with you when I have a second to think.

This week, the whole thing with the trade show is kicking in and I literally do not have time to eat or even much thought about it. I have A LOT to do. I am STRESSING but muddling through it. Very busy. Won't be able to visit much or write. I want to. But I leave in just over 2 weeks!

Hoping to be back soon. But if you don't see me, know that I am busily putting together my first trade show and knee deep in Christmas designs (yes Christmas), paper, cutting, planning, ordering and now and then even organizing (my downfall). On the positive side... I work well under pressure!

Best of luck with the trade show, Nicole. How fun to go to NYC!!!! Sans infantes? Let me know if you need a lacky to carry some of those Christmas designs.

Amy- Well my "friend" UPS is carrying most of my stuff for me but I need help selling! I WISH you could come! Everyone I know either has kids and can't get away or work. So my mom is the only help. Not only is she the right price (free), but she also pays for her own flight and our hotel room! I DO love NY but don't know how much time we will have to explore and play. Maybe some decent dinners though. And yes, sans infantes! I am soooo nervous to leave them. I haven't ever left them for more than 8 hours. And Paul is going to take off work (no pay) but I don't know how he will do. He is testy sometimes after I leave them for 3 or 4 hours! Yikes!

I've never had edamame. I have a prejudice against green veggies. LOL! Have fun and good luck at the trade show!!!

Have a safe trip! And the great thing about edamame is it's loaded with great protein to give you enough energy to power through.

Nicole, Paul will be fine - just clearly state that there are to be NO haircuts! Also, let him know to bathe the kids at least every other day & NOT wait until hours before your arrival for the first bath (speaking from experience here). This will be an excellent opportunity for bonding! Just don't expect dinner waiting for you or a clean house. Have fun with mom! She sounds like the perfect companion.

Jaime- Thanks! You sound like my husband!

Kate- EXACTLY!! It used to be a regular meal in my single days. Protein and fiber and kept me slim for all the dates so I could eat fine dining without worry!

Amy- I know! I seriously don't know that they will have a bath, brush their teeth or eat a vegetable. I will miss them so much. My mom and I will probably starve in the day but eat happy gourmet food at night!

Zen- Ha ha!! If I weren't there for serious business (and with my mom to boot), I might just be ready for trouble! ;-) But if you do have any mom friendly restaurants you could recommend.... I don't think she would go for the underground thing.

Good luck! Trade fairs are exciting. Try to set small tasks for the organizing and spread them out over the time you have left. You'll get there!

Thanks Emily. I think the biggest stress is leaving the kids. Getting things accomplished is easier for me under stress and deadlines.
